Taking inspiration from other craftspeople, French pastry chef François Daubinet presents 10 desserts that are informed by their work. Borrowing ideas from workers as varied as a glassblower, a seamstress, a watchmaker, and a jeweler, Daubinet lets his imagination flow freely and in unexpected directions. The watchmaker, for instance, suggests to him a sort of astrolabe created in the form of a pavlova. The work of a ceramicist leads him to create a version of île flottante that masquerades as a vase.
