A dazzling collection of finely detailed decorations for professional desserts and pastries, including explicit step-by-step photo instruction sequences. Garuharu is a pastry shop and school in Seoul, South Korea. Its founder, Eunyoung Yun, has made a name for herself by creating beautiful, classically inspired pastries which often emphasize the use of fruit. Although her training includes time at the Ecole Lenotre in France, the chef's visual style is distinctively her own. There are 44 decorations here, broadly grouped into categories such as chocolate, the use of textured sheets and molds, sugar paste, nuts and beans, tuiles and other crispy things, and ingredients such as herbs, flowers, and fruits. Each of the decorations is shown used on some type of finished dessert or pastry, offering additional visual inspiration to pastry cooks. The book is in Korean and English . While the translations are not fully idiomatic, any experienced kitchen worker will have no trouble understanding the instructions. Hardcover. Color photographs throughout. In Korean and English .
