Usha's Pickle Digest: The Perfect Pickle Recipe Book

$30 · Offered by Kitchen Arts & Letters

This book is nearly a legend. Originally self-published more than twenty years ago in India, it's a fascinating, painstaking collection of 1,000 Indian pickle recipes that earned its author the title "Pickle Queen." As the New York Times recently reported, Usha's Pickle Digest began with a first printing of just 1,000 copies and its immediate success was thwarted by the author's sudden illness. It took years for it to be reprinted and people traded photocopies because the originals were so scarce. This new print-on-demand version (admittedly somewhat grainy) retains the original's very basic layout. But the book's 356 pages are packed not only with recipes but technique tips, storage guidelines, ingredient references, and vocabulary translation charts. Among the vast number of recipes here: sour mango-ginger-garlic pickle plantain flower-tamarind pickle spicy corn-onion-bean sprout pickle cauliflower-lime pickle carrot-walnut sweet pickle cashew-green coriander instant pickle Clearly this is only a small sample of a dizzying panoply of pickles that captures thousands of years of tradition.
