The Australian Cook by Alfred Wilkinson - 1877 This is one of Australia’s earliest published cookbooks. This is the second edition, enlarged, possibly scarcer than the first edition (which was 1876) Most copies are held by libraries and it is uncommon to find a copy coming up for sale. 142 pages The Australian cook : a complete manual of cookery suitable for the Australian colonies, with special reference to the gas cooking stove / by Alfred J. Wilkinson. (Melbourne : George Robertson, 1877) Alfred Wilkinson was “Chef de Cuisine of the Athenaeum Club” in Melbourne. His book is prefaced with two essays, “The gas cooking stove” and “Directions for using the gas cooking stove.” Gas stoves had been introduced into Australia by A. R. Walker in 1873. They were promoted at the Intercolonial Exhibition of September 1875, where Wilkinson prepared a meal for 20 people using a £4 Walker stove.
