Vollständiges Küch- und Keller- Dictionarium, First edition of this "rare culinary encyclopaedia by the famous economist. A rich source for both gastronomic and cultural history" (Weiss, translated). Paul Jacob Marperger (1656-1730), trade adviser to the courts of Poland and Saxony, was a prolific cameralist author, publishing around 60 works. "Marperger's works are all very scarce today, partly because many were privately printed and had limited distribution and partly because they were so useful that they were literally 'read to pieces'" (Kress, p. 2).The book is vast - over 1,300 pages with the text in two columns - and arranged alphabetically, from Aal (eels: "provides a sticky and slimy nourishment") to Zwiebeln (onions: "provide no nourishment in themselves but serve rather as a condiment"). Marperger combines extensive citations of ancient and modern authors with his own commentary, emphasizing the effects of food and drink on health.
